Asparagus and Basil Soup

A positively inspired soup with a fresh green taste and bright pop of color! A perfect soup for early summer. Callie blanched her asparagus spears before hand but you can also leave them raw if you prefer. We encourage you to make your own coconut milk by blending coconut flakes
with water and straining it, or by blending Dastony coconut butter
with enough water to make a nice cream.
Ingredients 2 bunches of asparagus 1 clove garlic 1 C coconut milk (unsweetened) 3 T coconut flour 1 T tamari sea salt and pepper to taste Handful of fresh basil
Directions 1) In your Vita-Mix, combine all ingredients except basil. Blend on high for about 2-3 minutes until smooth. Once smooth, toss in basil.
2) Using the variable speed, set blend on medium low and blend for about 20-30 seconds (leaving a bit of texture to the basil).
3) Garnish with lemon zest, basil and a dash of cayenne.
