    This recipe was born of Callie's own creativity when she discovered she was out of pine nuts, walnuts and olive oil for her pesto sauce. Substituting hemp seeds and hemp oil not only works out fabulously in the flavor department but it also adds a very balanced essential fatty acid profile to this recipe. Most people are lacking in Omega 3's and hemp seed oil provides plenty of that. Nutrient dense AND tasty to boot! You may choose to just use kelp noodles, or you can do as the recipe suggests and mix in some spiralized zucchini. Enjoy!

Rich, creamy pine nut "cheese" in between thinly sliced light, crispy beet root. Finish the recipe off with a light drizzle of pesto oil, and serve them atop a bed of fresh micro greens or arugula. The meal is complete! You can use any variety of beets for this recipe, including striped, red, or yellow. Beets are highly detoxifying and are a great addition to your daily diet for gentle liver support.
