Cranberry Persimmon Orange Smoothie

When you eat in season you automatically get to enjoy MORE nutrition and better flavor within your food- a win-win! This smoothie by Kibby Miller of Kibby's Blended Life fits the seasonal bill perfectly and will give you an antioxidant boost with plenty of Vitamins A and C from persimmon and fresh cranberry. Juicy, luscious persimmons are such a joy to eat this time of year, and aside from being high in vitamins they also provide our GI tract with soluble fiber for a gentle cleansing effect. While this smoothie is naturally quite sweet, a dash of cinnamon and the natural fats found within coconut milk will help stabalize the blood sugar. Enjoy!


8 oz. organic cranberries
1 large organic orange - peeled - See NOTE below for TIP
1 organic persimmon - ripe - cut off top
1/2" knob fresh ginger root
2 bananas
3 TB. raw honey or liquid stevia to taste (8 drops) - I used NuNaturals brand
1 tsp. cinnamon
1 tsp. vanilla extract or 1/4 tsp. vanilla bean powder
1 cup organic coconut milk - canned
1 1/2 cups fresh water
(optional) heaping TB. of greens powder of choice (we love Pure Synergy!)


1) Put all ingredients into a high powered blender (I use a Vitamix) and blend until creamy and smooth. Top with favorite toppings if you so desire.
