My Favorite Raw Pumpkin Soup

Who says that you can't enjoy a warm bowl of hearty soup during the winter on a raw foods diet? This nourishing pumpkin soup by Kelly Fielding of Bella and Bhakti can be warmed gently on the stove top, or alternatively you can lightly steam the pumpkin before blending with your other ingredients. This recipe is full of spice and flavor -feel free to play around with the various seasonings to make your own unique taste buds come alive.
Ingredients 2 cups pumpkin (you can steam the pumpkin lightly of you like for a warm soup)
1 red capsicum
5 sun dried tomatoes plus
Directions 1. Blend all ingredients together until smooth and creamy using enough of the soak water from the sun dried tomatoes as needed to reach your desired consistency. I like mine quick thick so I only add enough to blend it through.
You may need to do the soup in two batches if your blender is quite small or add some extra water if you use raw pumpkin as opposed to steamed pumpkin.
Season to your desired taste and enjoy!
