Raw Pasta with Sundried Tomatoes and Herbs

A very simple and very delicious recipe by Iselin Stoylen of Vegetarian Taste that can be made with a variety of veggies you may have on hand. Combine spiralized zukes, sundried tomatoes, diced avocado, chopped onion, and fresh herbs of your liking such as basil, oregano, or even cilantro. Add salt and pepper to taste and an optional dash of olive oil and your dinner is served. Try a blend of zuchini noodles with julienned red bell pepper for a fun variation. Enjoy!

Ingredients

2 large zucchinis
1/2 sun-dried tomatoes
1 avocado
a quarter of a red onion
a handful of fresh herbs (I used basil and oregano)
some salt, pepper and garlic (optional)
