Raw Ranch Dip

has created a creamy and tangy ranch-style dressing out of a base of coconut milk and sunflower seeds, with plenty of yummy traditional seasonings such as dill, mustard spice, celery seed, onion and garlic. Serve it with fresh veggie sticks for a snack or dress tonight's green salad with a generous drizzling. You'll love it!
Directions 1) Add all of the ingredients to a high powered blender, such as a Vitamix, and process until very smooth and creamy on the highest setting. Make sure you have shaken the can of coconut milk really well first before measuring, so you aren't getting all water (or use a homemade coconut milk).
2) Scrape the sides a couple of times and blend again for a good couple of minutes so it gets really smooth and thickens. The dressing will be fairly thin, do not add more water, it will thicken well in the fridge.
3) Pour into a container and chill in the fridge for an hour or two to marinate, so it gets cold and thickens further. The flavor really is best after it chills and marinates.
4) Before serving, garnish with more dill and chopped parsley, for presentation and added flavor.
