Raw Taco Salad

Raw Taco Salad

A delicious raw variation of a taco salad dish by Iselin St

Ingredients

Raw Taco-meat

1 cup / 2dl walnuts
1 cup / 2 dl sundried tomatoes
1 garlic clove
1/2 tsp pepper
1/2 tsp cumin
1/4 tsp chili powder

Guacamole

2 avocadoes
1 tomato
1 tsp lemon juice
Salt, pepper, chili powder and cumin

Directions

Raw Taco-meat

1) Blend together all of the ingredients in a food processor and serve.

Guacamole

1) Blend the avocadoes in a food processor. Add salt, pepper, chili and cumin to taste. Slice the tomato in tiny pieces and mix them in with a fork before serving.

Serve on a bed of fresh spinach or greens of your choice!
