RAW VEGAN COCONUT CURRY SOUP

This recipe by chef Lena of www.mypureveganfoods.com will give you a warm soup without the need to cook and saving all enzymes. This delicious soup can be served chilled or warm, and either way it tastes amazing!

Ingredients

INGREDIENTS
  • 1 young Thai coconut (the flesh and water)
  • 1 carrot, cut in chunks
  • 1 clove garlic
  • 1,5 tsp ginger powder
  • 2 tsp curry powder

Directions

INSTRUCTIONS
  1. Fill a medium size bowl with the sliced vegetables (bell pepper, cucumber and cilantro).
  2. Blend the rest of the ingredients in the Vitamix.
  3. If you want warm soup blend for about 2 minutes, otherwise blend until creamy.
  4. Taste your soup and adjust the flavors: sweet, spicy, and salty as necessary.
  5. Pour over vegetables and serve.
  6. Garnish with cilantro.
