    What's the key to the perfect green soup? You must have an acid, a salt, and a fat in order to balance the often-times strong flavor of greens. If you've ever made a green soup and couldn't really enjoy it due to a bitter taste than this recipe will be a great tried and true base to work with. Heather Pace combines mild flavored spinach with a bit of celery and 3 different fresh herbs. For an acid she uses apple cider vinegar, the fat is avocado, and for salt a pinch of unrefined sea salt does the trick or you can use your favorite sea veggie!
