Simple Cauliflower Tabbouleh

If you're under the impression that you can't enjoy cauliflower raw, you must not have tried it as tabbouleh! Cauliflower tabbouleh is an excellent version of a raw, light and healthy salad. The addition of chia seeds, hemp seeds, and gomashio instead of salt within this recipe by Petra of Oh My Delish gives an important upgrade to the nutritional value.
Ingredients 1 large cauliflower grated in a grain-size pieces
3 medium tomatoes, skin peeled and chopped into small pieces 2 shallot, peeled and finely chopped a handful of fresh coriander, finely chopped a handful of fresh mint, finely chopped 2 tbsp chia seeds
1 tbsp hemp seeds 1 lemon, juiced
extra virgin olive oil
Directions In a large salad bowl, add grated cauliflower, tomatoes, shallot, fresh coriander, fresh mint, chia seeds and hemp seeds. Combine well. Cover and set in the fridge. Add olive oil, lemon juice and gomashio right before serving, mix well. Serve chilled.
