    A very easy chocolate avocado banana tart with a walnut and raisin crust. The fresh raspberries add a fresh pop of bright fuscia which looks so nice contrasted with the rich cacao flavored filling. While both creamy and dense, this recipe actually requires very little nuts and is therefore quite easy on the digestion. Try it out while fresh raspberries are still in abundance! You may even choose to throw in a few golden raspberries too for an even brighter display of juicy colorfulness.

"My recipe combines a crumbly hemp and oat crust with a thick (nearly sliceable) coconut filling, topped with a berry puree instead of fresh berries. It's light on the nuts (only 1/4 cup in the whole recipe), low in sugar, and will hopefully leave you feeling refreshed as we did eating it." In the ingredient list you will find agar which is a seaweed derived thickening agent which will enable you to acheive that thick, dense consitency without having to relay on nuts or coconut oil.

    This recipe was Nicole Axworthy's entry in Yum Universe's birthday themed whole foods recipe contest! it is an epic 6 layered brownie blizzard ice cream cake complete with truly raw cashews, cacao, coconut and more! Nicole describes her highly creative culinary creation: Layer one includes "a dense, chocolatey, brownie cake base." Layer 2 is "a smooth, light vanilla soft serve." Layer 3 is "creamy macadamia nut caramel." Layer 4 is almond and chocolate cookie crumbs." Layer 5 is "more vanilla soft serve, but with thick brownie chunks." And last but not least, layer 6 tops the cake "with a smooth chocolate ganache and more brownie chunks". If someone is offering to make you a raw cake for your birthday, hand over this recipe with a wink and a smile! It may take a bit of time to prepare but there is no question as to whether it will be worth the effort!

Many people don't realize that even though coconut oil is a saturated fat, the molecules are medium chain triglycerides which digest quickly and are utilized as energy by the body almost instantly. This is much different than other forms of saturated fat (long chain triglycerides) from both plants and animals which require a lot of energy and enzymatic breakdown by the body to utilize and are much more likely to be stored as fat.
