Tomato Basil Soup

Simple, satisfying, and sooooo good! Tomato basil soup just seems to sound good no matter what. This particular version by Lisa Viger combines a base of tomatos with celery and carrots, and a bit of zip and heat from onion, black pepper, and red chili flakes (if you dare!). Basil and olive oil are added for the ultimate Italian flavor. This soup is light and perfect for the summer if served chilled. Don't dismiss this recipe in the winter-time however, it is also great gently warmed up on the stove! Lisa also suggests that you try out her blended soup recipes with less or no added oil for a lower fat version if you wish.
Ingredients 3 tomatoes ($3.00)
2 carrots, chopped ($.20)
2 celery stalks ($.20)
1 medium onion ($.05)
4 tablespoons olive oil ($.40)
1 tablespoon dried basil
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
red pepper flakes (to taste, optional)
Directions 1) Add all ingredients to blender and puree until smooth. Top with a few red pepper flakes and a drizzle of oil.
